I found another reason to use the Instant Pot: pressure cooking garbanzo beans or chickpeas. Now only is this an simple chickpea recipe, there's a bonus cooking tip in this video involving brown rice.
2 cups dried chickpeas/garbanzo beans
4 garlic cloves
2 bay leaves
covered with 2 inches of water
Cooked with high pressure for 35 minutes. Allow pressure to go down on its own before removing lid, which takes maybe 15 minutes. Watch the video for more details.
