I can't get enough tomatoes to eat when they're in the peak of their season. Tomato salad recipes are just about my favorite way to enjoy this Summer fruit. Yes, that's right, I said fruit.
HERE'S ALL I DO
- 2 cups grape tomatoes, washed and roughly chopped
- 1/4 cup purple onion, finely chopped
- olive oil
- balsamic vinegar
- salt and fresh ground pepper
Toss the chopped tomatoes and onion in a medium bowl. Add equal parts of olive oil and balsamic vinegar, enough coat the mix very well. Season with salt and pepper. Allow to marry for 30 minutes or so, before serving. Serve at room temperature or chilled.











On toast with mayo, salt and pepper. That’s it. Although I eat them just like you do if I have already had enough bread for the day. Definitely not a sacrifice – I love them simple!

In your Tomato Salad with Balsamic Vinegar recipe…it would be nice if you could include the portions for the olive oil and the balsamic vinegar.
