Oven-Fried Chicken

HERE'S ALL IT TAKES

chicken coating recipe

  • 2 cups dry bread crumbs
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons paprika
  • 1 teaspoon celery salt
  • 1 teaspoon onion salt
  • 1/4 teaspoon pepper
  • 1 teaspoon poultry seasoning
  • 1/4 cup cooking oil

Mix all the ingredients with a fork or food processor.

Side note: Chicken coating recipe makes 2 1/3 cups, enough to coat a whole chicken cut into parts.  You'll have extra coating mix if you're planning to cook only a few pieces.  Unused mix keeps unrefrigerated in tightly covered container until ready to use.

Back to the oven-fried chicken recipe.

Heat oven to 350ºF degrees.
Put 1/2 cup coating mix in a plastic or paper bag.  Moisten chicken pieces with water and shake one piece at a time in the bag.  Add more mix as needed.  Lay chicken skin-side up in greased pan.

Bake for 1 hour or until tender. No turning needed.
