Here's a healthy chicken dinner that falls under simple chicken recipes and diabetic recipes.
HERE'S ALL IT TAKES
Serves 4
- 2 sweet potatoes, peeled, cut into 1/2-inch chunks
- 2 teaspoon oil
- 1 cup onion, chopped
- 1 pound chicken breasts, bare & boneless, cut into 1-inch chunks
- 3 garlic cloves, minced
- 2 teaspoon chili powder
- 1 can (14 ounces) diced tomatoes, spicy
- 1 can (16 ounces) kidney beans, drained
Place sweet potatoes in a large saucepan. Add enough water just to cover them. Bring to a boil over high heat. Reduce heat and simmer for 5 minutes or until almost tender. Drain well with a colander. Set aside.
Using the same large saucepan, heat oil over medium heat and cook onion for 5 minutes. Add chicken, garlic and chili powder and cook for 2 to 3 minutes. Stir frequently. Add tomatoes with their juices, beans and partially cooked sweet potatoes. Bring to a boil over high heat. Reduce heat; simmer uncovered for 10 minutes or until chicken is cooked through.

umm…when and how am I supposed to add/cook the chicken?
Thank you for bringing that to my attention. The chicken goes in AFTER the onions are cooked tender, and along with the garlic and chili powder.
