
This makes a very satisfying lunch. This easy egg salad recipe can be devoured using fresh spinach leaves as wraps or between two slices of whole grain bread. The cayenne pepper gives it just enough kick to keep it from being ordinary.
HERE'S ALL IT TAKES
6 servings
- 6 hard-boiled eggs
- 1 cup finely diced celery
- 1 tablespoon grated onion
- salt and fresh ground pepper to taste
- a healthy dash cayenne pepper
- 1/2 cup mayonnaise
Cut up the eggs coarsely; add the celery, grated onion, seasonings and mayonnaise. Mix lightly.
The taste grows bolder after it has had time to chill in the icebox.
