Coffee Hous Cookies

My husband and I met in a coffee house, called what else?
Coffee Haus.

I worked as the manager and he was looking for a job.  When we met up for the interview, we talked for 3 HOURS!  I had no idea I was interviewing my future husband.  I was only looking for someone who I could spend long hours working next too that wouldn't drive me crazy.  Ten months later, we were married.

Anyhoo.  Coffee Haus had these cookies brought in from a local bakery that were our absolute favorite snack while working.  They were huge and loaded with delicious goodness; chocolate chips, pecans, and coconut.  I baked a batch yesterday.  Charlie was immediately sent back to our days at Coffee Haus.

HERE'S THE COFFEE HAUS COOKIES

  • 1 cup packed brown sugar
  • 3/4 cup sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup M&Ms chocolate candies
  • 1 cup shredded, sweetened coconut
  • 1 cup toasted pecans, chopped
  • 1/2 (12 oz) package semi-sweet chocolate chips

Heat oven to 375ºF degrees.

Beat sugars and butter in large bowl with mixer on medium speed until fluffy, about 3-5 minutes.  Beat in vanilla and eggs.  Stir in flour, baking soda and salt.  Stir in M&Ms candies, coconut, pecans and chocolate chips.

Drop dough 1/4 cupfuls about 2 inches apart on ungreased cookie sheetBake 11-14 minutes to until the edges are light brown (middle will be soft).  Cool 3-5 minute; remove from cookie sheet to wire rack.
