I roasted chicken the other day. This time, I seasoned it differently and the kids gobbled up their dinner faster than I could sit down. Why is it that it takes 30 minutes to an hour to prepare dinner, but it only takes 5 minutes to finish the meal?

HERE'S WHAT I DID FOR DINNER
- 4 chicken breasts with skin and bones
- season salt
- pepper
- 4 large garlic cloves, halved
Heat oven 350ºF degrees.
On a my favorite cookie sheet, I coated the chicken with olive oil. Seasoned generously with spices, then tucked garlic slices under the chicken skins. Roasted them in the oven for 30-40 minutes. Removed from oven, covered with foil and let the chicken rest 10 minutes of so. Long enough to finish mashing and preparing the mashed potatoes.
I served a warmed, buttered, French bread loaf on the side.
