Leftover Potatoes and Broccoli

Sometimes there's too much of one leftover.  Do you get that occasionally?  Last week's party left us with a bit too much mashed potatoes to eat.  I started our nights of leftovers with this recipe.  It's so super simple, I almost didn't post it.  However, it was tasty, comforting, nutritious, and my kids ate it up.  Therefore, it qualifies for a posting.

HERE'S ALL YOU NEED TO DO

  • leftover mashed potatoes
  • sour cream
  • shredded cheese
  • fresh broccoli florets

In a small salad bowl, line bowl with mashed potatoes, leaving a well in the center.  Coat the well with about 2-3 tablespoons of sour cream.  Fill well with 1/4 cup of cheese, then poke in broccoli. Season with salt & pepper  (See picture above)  Cover with plastic wrap and microwave for 3-4 minutes, or until broccoli is at desired tenderness.  Allow to stand 1-2 minutes before serving.

We had this for dinner last night. It was very easy to fix and everyone (that loves Broccoli) loved it. The sour cream gave this dish a wonderful taste.

Great site! I was wondering, is there a substitute for the sour cream?

This recipe looks fantastic, can’t wait to give it a try. I usually use plain yogurt instead of sour cream in recipes, would that work for this one?

    • Labella, if plain yogurt is what you usually prefer, then go for it!
I figure so long as I like everything going into a recipe, then I will most likely enjoy the final dish. But you let me know how you like it.

Even though you wrote that this was almost too simple to post, so glad you did. I needed something to do with leftover mashed potatoes to get picky eaters to want it. Did a google image search and the picture came up and it was perfect. Thanks for sharing!
