Chocolate Chip Cookies

Do you ever have those days when you deeply crave dark chocolate surrounded with brown sugar? Where all you want is simple, straight forward chocolate surrounded in a soft dark brown sugar shell, i.e. a big honkin' chocolate chip cookie.


  • 1 cup packed dark brown sugar
  • 3/4 cup sugar
  • 1 cup butter, softened
  • 1 teaspoon pure vanilla extract
  • 1/2 cup healthy egg substitute, or 2 eggs
  • 2 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cups semisweet chocolate chips

Heat oven to 350F degrees.

Beat sugars and butter in large bowl with mixer on medium speed until fluffy, about 3-5 minutes.  Beat in vanilla and eggs.  Stir in flour, baking soda and salt.  Stir in chocolate chips.  Using a 1 inch scooper, dole out dough on cookie sheet about 2 inches apart on ungreased cookie sheet.

Bake 11-13 minutes to until edges are light brown (middle will be soft).  Quickly remove from cookie sheet to wire rack.   Store in an airtight container to keep fresh and soft.

Nothing could be more comforting in times like this than a good old fashion, better than grandma's, chocolate chip cookie.

      I’m glad you made these cookies. They won’t last long. Get all you can before the kids get home! Stash a few if you have to!

    Of course, they won’t turn up their noses at chocolate chip… or any other cookies for that matter!

    These go great with morning cereal. They cover all the major food groups and the milk is good for you.

    MMMMMMMM….chocolate. They look so good they’ve inspired me to try and bake them. For some reason, I can’t do chocolate chip cookies. A 16-layer dobosh torte, no problem. A simple gooey chocolate chip cookie escapes me. But I have faith this recipe will work.
