BAKED TILAPIA and SPINACH

HERE'S ALL IT TAKES

Serves 1

  • 1 frozen Tilapia fillet
  • 1 cup frozen spinach, thawed & squeezed dry
  • 1 garlic clove, minced
  • 1/2 fresh lemon, squeezed
  • paprika
  • red pepper flakes
  • salt & pepper
  • goat cheese

Heat the oven to 400ºF degrees.

Use enough heavy duty tin foil to hold the fillet. Spray foil with nonstick cooking spray.

Squeeze lemon juice over fillet. Generously season fish with garlic, paprika, salt & pepper, and as many red pepper flakes as I can stand. Lay spinach on top, season with salt & pepper. Close up foil so it makes a tent, allow a place for steam to escape. Bake for 10 to 15 minutes.

Using oven mitts, remove foil tent from oven, carefully open foil to expose the fillets. Return to oven and continue baking for another 8 to 10 minutes until fish flakes very easily with fork and is opaque in center. Top with crumbled goat.
