Campers Casserole is simple to bring together and I could totally imagine it being cooked in a dutch-oven over a campfire. Since I was home, I used my trusty casserole dish. You may want to salt & pepper this dish to your taste. My husband and son enjoyed this dinner with ketchup on top. It was very filling and I enjoyed trying this new recipe. But I'll be honest, it needed an extra spice, maybe oregano or cumin or maybe a green bell pepper?
HERE'S ALL IT TAKES
Serves 4 to 6 campers
- 1 pound extra lean ground beef
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1 1/2 cups cooked rice
- 1 can (14oz) or 2 cups kidney beans or pinto, drained and rinsed
- 1 bigger can (28oz) diced tomatoes, pureed or use tomato sauce
- 1 cup cheddar cheese, grated
Heat oven to 350ºF.
In a large pan or dutch oven over medium heat, brown the beef, onion and garlic. Season with chili powder. Stir in cooked rice then transfer mix to a greased 13-inch by 9-inch casserole dish. Add one layer of beans then pour on pureed tomatoes.
Bake, covered, for 40 minutes. Uncover, sprinkle with cheese. Return to oven and bake, uncovered for 10 minutes or so, until cheese is melted.

I crave this kinda thing every once in a while. In my mind, it’s like an excuse for eating bean dip for dinner. And what could be wrong with that??
Absolutely!
This is very similar to my son’s favorite dish I make all the time we call red rice. Your recipe has the addition of beans. I think I’ll try this tonight! Thanks!
This reminds me so much of home and the meals my Dad would throw together! yum!
very cool eh…I tried doin it…delicious…yumyum you are good…
Looks DELICIOUS! ?
I need to make this again and try it with a poblano pepper cooked with the ground meat, and maybe a little more chili powder.
Looks great! I wish I came across this recipe last week. My girlfriend and I just got back from camping along the Delaware River. This would have been perfect camp fire food!
Thank you, Tom!
I love camping. Did you do any fishing? I love fishing, too.
Jill, thank you for this recipe! I can’t wait to try it.
Just one question: by chili powder, do you mean the spicy stuff or the flavoring sauce? Thank you!!
HI LILY!
I mean the spicy powder stuff that’s more mild than spicy. Be sure and come back here and let me (us) know how your dinner turned out.
