The first time I read this spinach salad recipe, I wasn't so sure about it. I knew if I served it up to a group of women, it would go over just fine. However, I needed for a couples Sunday night life group. This was a group that had burly men and picky eaters all mixed in together. My rebellious side said "go for it!" So, I made it.
IT WAS DELICIOUS! The crowd went WILD! The picky eaters naturally picked but overall, there were no leftovers!
HERE'S WHAT YOU NEED
- 2 bags of baby spinach leaves
- 1/2 medium red onion, thinly sliced rings
- 1 (11 ounce) can mandarin oranges, drained
- 1 1/2 cups sweetened dried cranberries
- 1 cup honey-roasted sliced almonds
- 1 cup crumbled feta cheese
- 1 cup Brianna's Blush Wine Vinaigrette Dressing
Now, you can either create beautiful individual salads, or you can layer this salad in a large bowl. Top the spinach leaves with red onion, mandarin oranges, cranberries, sliced almonds then, feta cheese. Drizzle dressing on individual salads or allow your guests to serve themselves.
AS A LIGHT LUNCH
Add chilled and sliced, grilled chicken.
This is a beautiful salad that's fun to serve at gatherings. The combination of ingredients does sound strange, but trust me! This salad has a wonderful mix of flavors that will have you going back for seconds.

Thanks, this salad is fun to eat. I enjoy picking at it to get a variety of flavors with each bite. Then I always try to skewer each bit onto my fork for one big ol’bite. I don’t look pretty when I do, but it tastes GREAT!

Strawberry Vinaigrette dressing
* 1 cup olive oil
* 1/2 pint fresh strawberries, halved
* 2 tablespoons balsamic vinegar
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 teaspoon dried tarragon
* 1/4 teaspoon white sugar
In a blender or food processor, mix olive oil, strawberries, balsamic vinegar, salt, pepper, tarragon and sugar. Blend until smooth.
