Italian Marinade Blend

This blend of spices makes the best grilled chicken you've ever eaten!

This recipe was born from not having a bottle of Italian salad dressing on hand. I was looking for a quick marinade for my chicken fillets and was clean out!

I served it to my friends and the kiddos and EVERYONE grooved on the combination. Thank goodness I had enough chicken, because every body asked for seconds.

HERE'S ALL IT TAKES

  • 2 tablespoons minced onion
  • 1 large garlic clove, crushed
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon fresh ground pepper
  • 1 teaspoon kosher salt
  • 1/4 cup canola oil
  • 3 tablespoons red wine vinegar

This was enough to marinade 4 chicken breasts. The meat marinaded in the refrigerator for 2 or 3 hours, before I cooked it on the grill.

Of course, I would have easily cooked it on my grill pan on the stove top. But it was just too beautiful outside not to start up the grill.

    You know how it goes…everybody’s STARVIN’ to eat and there’s no time to grab the camera.

    I chose to wear my hostess hat, instead of my blogger’s hat, and had to let it fly.

    It happened for me also…I tried Baby Kailan and was taking pictures of each step I did, but somehow forgot to click the final output:) I realised it when I had the last spoon of it :(

    This is simply the best marinade I have ever used! I changed it up a bit by using shallots for regular onions, and used 2 cloves of garlic because i do that with just about every recipe as my hubby and I love garlic. I also used EVOO for the canola oil. Simply delicious! Thanks for posting!
