Here on my desk sit 5 lovely, brand new Healthy Bread in Five Minutes a Day 100 New Recipes Featuring Whole Grains, Fruits, Vegetables, and Gluten-Free Ingredients books.  They are so pretty, let me tell you.  And OH the recipes, the information rising out of this book... it's enough to make you want to open up a healthy bakery!  I'm in love, again, with all the work Jeff and Zoë have put forth into this book.  They have gone above and beyond.  Another great book. Another must have.

AND she hooked me up with an interview with Jeff Hertzberg, M.D. and Zoë François; what a thrill!  Even though I already chat with Zoë on Facebook, I was somehow star-struck at the thought of interviewing them both.  I'm silly, I know.

Jill: Your first book, Artisan Bread in Five Minutes a Day (ABin5), was published over 2 years ago.  When you considered writing it, did you ever imagine it would bring you to where you are today?

Jeff & Zoë: I always thought it might sell if we could get the message out to enough people over a quick burst of time, because Zoe and I (and our families) knew that the method worked.  If we hadn't had a little luck with national coverage (The Splendid Table radio show, the New York Times, and the Associated Press), we wouldn't have had a success.  But we had coverage in all three of those.  From there, it "went viral" on the Web.  The Web makes everything possible for unknowns without a TV show.  Before the web, the cookbook market had really solidified around books written by people who had a TV show.  What a difference today, and our book really demonstrated it by giving readers a quick way to communicate their success with the book.

Jill: How many copies of ABin5 have sold?

Jeff & Zoë: There are 250,000 copies in print; the publisher likes to print a few months ahead of demand but this means that a quarter million will have been sold by 2010.  Demand remains as strong as ever for our first book.

Jill: What's it like to be successful cookbook authors?

Jeff & Zoë: It's more fun than a barrel of monkeys!  Never thought I'd be doing any of this kind of work.  It's mostly creative, but there are business decisions to be made as well.

Jill: What moved you to write Healthy Bread in Five Minutes a Day (HBin5)?

Jeff & Zoë: On our website (www.healthybreadinfive.com), everyone started asking for something with whole grains and with gluten-free ingredients.  Our two books together really cover the whole range of bread now, from light breads in the European tradition, to very hearty whole grain American-style stuff, to gluten-free loaves that really taste good and store as well as our wheat breads.  I'm very proud of these books, and so honored that so many people have chosen them.

Jill: How are the recipes different?

Jeff & Zoë: There's much more whole grain in this book; with one exception (an olive oil challah), everything is at least 50% whole grain, the "Master" is about 75% whole grain, and another ten "Masters" are 100% whole grain-- even a Holiday Stollen is 100% whole wheat and it is delicious.  That meant we needed vital wheat gluten to lighten up the results.  Otherwise it was too dense to store, and storage is still the key to our method.  If you can't store the dough, you don't really change the time equation for busy people.  That's how our books are different.

Jill: Do the recipes follow the same steps of the ABin5 Master Recipe?

Jeff & Zoë: Almost-- everything just gets dumped together into a bucket or bowl.  The only difference is that you start with the dry ingredients, so you have a chance to mix the vital wheat gluten in with the flour.  It needs to be distributed like that or it forms firm clumps with the liquids.

Jill: While watching the video, I noticed you used parchment paper instead of corn meal.  Why is that?

Jeff & Zoë: You can continue to use cornmeal on the pizza peel, as in the first book (I think we have some new video with cornmeal).  For "Healthy Bread," we just gave more options and our first video had the parchment version.  Personally, I think the best, crustiest result is achieved with cornmeal, because parchment interferes with moisture transfer into the baking stone.  It's a subtle difference though, and some of our readers find the parchment to be a much neater and cleaner method (no scorched cornmeal in the oven).  You can even bake on a silicone mat (same issue with moisture transfer).  If you use parchment or silicone, peel it off for the last third of baking to dry out that bottom crust.

Jill: And finally, what's the funniest thing to have happened to you while promoting your books?

Jeff & Zoë: You have to be willing to laugh at yourself, I mean, we're not professional marketers or TV personalities.  On live TV in San Francisco, the interviewer looked at me and asked, "So, where are you guys doing your book signing tonight?"  I looked at her and said "I don't know!"  It's in the video...

    I am a Moron. Not just any old Moron but a real live, uni-browed, died-in-the-wool, if-it-aint-hard, it-aint-worth-doin’ Moron. Three years ago I decided that I need to learn to bake bread. Not just any bread, but huge, rustic, whole grained, brick-oven bread like you see on the covers of all of the bread books I bought. A couple of years ago I saw Jeff and Zoe’s book hit the shelves, and the web and everybody’s blog that wrote anything about baking. In my mind, I retreated to my happy place and told myself that how good could it be if it only takes 5 minutes. Baking Bread is an event. Aunt Martha comes over when you bake bread just so she can see your face turn red as you’re kneeding the dough. But, between those events, I would still like to enjoy good, home-made bread but who has time. As of today, you can officially call me a convert. I will spend the rest of the Winter making Artisan Bread in 5 Minutes a Day. Now, If you want me to make Healthy Bread in 5 Minutes a Day, I need to win one of these new giveaways.       A push reel lawn mower, huh? Are those the old fashion ones without a motor? We had one back in the honeymoon years; it was great for a small lawn.

    • Lynn, isn’t it nice that each dough recipe can be doubles easily and we can get four loaves from each batch? That makes it a no-brainer to toss a loaf of bread in the oven whenever we feel like it.

After th last book giveaway, which I never managed to win, one of my family members took pity on me (Or just wanted me to shut up about wanting this book) and gave it to me for Christmas. YAY!!! While I have not had to to do much yet from the book, what little I have done has been a huge success in my mind. So, being as I am diabetic, I really want to have the new reipes so I can move to more complex carbs in my bread that works better with my system than the lights and whites!

      I applaud you for taking action toward a healthier lifestyle. And you’re right, there’s not very many truly healthy choices in the stores. When we start reading the labels, it’s very apparent how unnatural food can be.

      Michael Pollan reminds us, if it comes in a box, it’s not natural food.

      Look to the foodie marts in their bulk bin sections for whole grains, a variety of flours, legumes, and fresh spices. You really can save money purchasing in lose bulk. And it’s the perfect place to try new ingredients, spending as little as $0.11, to discover new recipes.

The only downside to me was how many of the recipes relied on white flour – I’m a whole wheat girl when I can help it.     I have the first book, Artisan Bread in 5 Minutes a Day, but would really love to get this book, so I could experiment with more whole grain breads and share gluten-free breads with my mother who has a gluten allergy. I have the new book requested at the library but I am something like #346 on the waiting list, and will only be able to have it for 3 weeks because of the waiting list (that is, when I get it sometime in the next 2 or 3 years…). I’ve been so enthusiastic about this method that I’ve sold a friend on it; she loves it, too. I used to make all my bread from scratch, even ground my own wheat, and kneaded by hand, but haven’t been able to do that for many years. Now I love the simplicity of this method–plus its absolute GOODNESS, because being simple and easy is not enough if it isn’t also delicious!

    I have both books and I love them, I have made countless loaves of bread since May, I bought my Mom ABin5 for Christmas would love to win HBin5 for her. The best part is that you can easily adapt the size of the loaves, I make a small one just for me but larger ones when the kids are home from school. I always have fresh bread.

    Thank you Monica and Jill! I love to bake, but have never really gotten into baking bread – this book could change my life! I currently spend about $12 a week on artisan bread – just think what I could do with the money I would save, plus my house would smell so great!

      Francine, I have roughly calculated certain recipes from Artisan Bread in Five Minutes a Day. I spend between $0.50 to $1.50 per loaf for the freshest, prettiest, most delicious bread in town. Because we can have fresh bread anytime now, I am buying in bulk. I can get 1 pound of dry yeast for $5.00 at Costco; that’s a money saver. Ingredients such as cheese, fruits and vegetables will add to your costs, but the recipes don’t ask for a lot. So it’s still economical to get fancy.

      I use to buy artisan breads when I drove to Dallas to my favorite foodie mart. But now I use the foodie mart bakery as source of inspiration for new flavors. I can taste their rosemary bread and decide if I should bother making it at home. That’s fun.

    my home smells so good with a loaf of raisan bread baking in the oven. the recipe is from the first book and I haven’t tried one that isn’t a keeper. I hope to bake every recipe in the book then start on book #2.

    Artisan bread at the Farmers Market, where I shop in season (April-October), and then purchase at the Whole Foods Market or other outlets, is WAY out of my budget–over $7 for a loaf of bread I can’t finish before it goes bad. Can’t wait to get your book, and try some small, home baked loaves. Ahhh, I am first a person of the sense of smell and then — the coup de grace!

    The smell of baking bread is positively aphrodisiac. It makes my husband all lovely-dovey, anyway. ;-) He really appreciates the efforts I make toward healthy food and whole grains.

    I made my first batch this weekend, from online instructions. I used all wheat instead of 75 percent, and added maybe a quarter cup (a glop?) of local honey to the Master Recipe to ensure the yeasty rise and take a little of the bitterness out. It was better than chocolate (from his viewpoint, anyway)!

    The first batch was a little flat but knee-saggingly delicious. I’ve let bread intimidate me, and here was the best thing we’ve dredged through soup in a long time. For the second loaf, I doubled up and used a loaf pan; also lowered the oven temperatures to 450, as any higher sets off the smoke alarms (always has). It was terrific! A dark, rich hearty sandwich/toasting bread. The last loaf I tried in the enameled crock, and that worked too.

    So, even though I tried different methods, added items or amended recipes to suit, changed baking times, I got delicious bread. It really seems to be foolproof.

    Got the second Master recipe in the fridge right now. I’m dying to read the book!

  • Hi, I’m new to this sort of thing. I really won’t know if I did everything correctly, but I’m willing to try. I love bread and the mystery of how it is made is what drew me to it watching my mom making all kinds as we were growing up. The eight of us kids, live-in grandparents and especially my dad loved all the different breads she made, not to mention some occasional just in time drop in after school friends. Now that it is just me and my husband, these recipes work out just right for us. It would be a great adventure without the hard work to try these new recipes in Healthy Bread in 5 minutes a day. Thanks for all the research and hard work.

    Having just finished reading Michael Pollan’s, In Defense of Food, my new year’s resolution is to eat healthier and smarter. This morning I read the label on a loaf of Brownberry Health Nut bread and was pretty astonished by what was there.

      I have that book and LOVE IT! I have it on audio and have listened to it twice. I found it to be a positive book towards understanding how we come to eat the way we eat. I dug learning about the age of nutritionism and how it has affected our national health….it’s amazing and has had a profound effect on my perspective. I am a changed person.

      If you ever want to just chat about your favorite parts of the book, email me. Although I’ve read the book, I haven’t had the fun of sharing my enthusiasm for it with another reader. (That sounds so sad.)

      Food, Inc. is a MUST WATCH movie. We caught it as an instant watch on Netflix and LOVED IT, in a eye opening way.
      I have also enjoyed watching KIng Corn, The Botany of Desire, and The Future of Food. And of course, Super Size Me.
      All great films that will make us look at our grocery store and what we think is good food, a lot differently.

        And the bottom-line takeaway for me was … learn to cook and bake with whole foods again.
        The processed food industry is not necessarily our friend. With whole foods and home baking, I get to control the additives, ingredients and process.
        We have to start cooking and baking again.

      I have batch of Olive oil dough mixed with fresh ground pepper, dried basil and a little onion powder. It has been wonderful for dinner and as a breakfast toast with my morning eggs.

      I, also, made a batch of Oatmeal bread with added cinnamon. It’s time for me to bake it today. Can’t wait to fill the house with the smell of cinnamon and bread.

    I make a lot of our bread, especially in winter. I would love to try making artisan bread, but I have failed miserably at trying to win their first book, so I am about to splurge on it. I am psyched to think that there is an even healthier way to make it, so I’ve really, really GOT TO get this book!
    Also, our niece has a gluten allergy and when she comes to visit, she usually brings her own bread, so it would be nice if I could make her a nice fresh loaf while she’s here. I know she would appreciate that. :)

      Have you been over to the Artisan Bread site? They have a copy of the Healthy Bread Master Recipe. After you have experienced making the ABin5 Master Recipe, you’ll be ready to make a gluten free loaf for your niece. The steps are the same, only the ingredients are different. Easy, easy.

  • I have 2 special needs children out of four! One has had 5 open heart surgeries and the other is autistic. Homemade bread is wonderful in that it gives me control of the ingredients. All of the children love the bread and they all love to ‘help’ mold the dough into shapes. Then they brag to daddy about what a wonderful job they have done ‘making’ bread! It is fun for them and yummy for all. The book would be wonderful for the benefit of the health tips alone. Thank you!

  • I could just live on good bread and fruit and cheese. One of the things I miss about home is our good bread. There are many things to enjoy in the US but good bread is hard/expensive to find.     I would love to add this cookbook to my growing cookbook library. I have had renewed energy lately to try new recipes, much to my husband’s dismay sometimes.

      I’ve learned to ignore his first look into the cooking pots and just get dinner to the table. My husband can be just as picky as the 6-year old. He won’t admit it to anyone else, but he’s picky.

      I’ve also learned to make lunch time, My Special Meal Time. It’s when I can eat all the eggplant, spinach, tabbouleh, mushrooms, fish, etc…I want to eat without the looks.
