Spinach Hummus Tostadas are this week’s lunch wonder hit. I totally dig the warm, crispy whole wheat tortilla and spinach hummus together topped with zesty onion, bright cherry tomatoes and the fresh sprouts on top. It’s possible that this vegetarian delight will be my newest lunch habit.
HERE’S ALL IT TAKES
- 1 whole wheat tortilla
- 3 to 4 tablespoons spinach hummus
- 1 thin slice yellow onion
- 2 cherry tomatoes, sliced
- 1/4 cup mixed sprouts
Use a small skillet over medium heat to heat the tortilla until crispy on one side. Flip the tortilla. Spread the hummus evenly. Top with slivers of onion, tomatoes, and sprouts. When tortilla is crisp on bottom side, transfer to plate. Eat UP!
