Now I want to make one thing clear. In Artisan Bread in Five Minutes a Day, you're NOT, repeat NOT, making a sourdough starter that needs tending and feeding.
These recipes are simple, no-brainers, written in full, designed to make four - 1 pound loaves. For instance, when I make a batch of Spinach Feta Bread. I'm mixing only enough ingredients to bake four loaves of bread. When all the dough is baked, that's it, I'm done. I wash out my container and pick another recipe like, Bran Enriched White Bread. And I don't have to bake all the loaves at once. Depending on the recipe, the bread dough can wait 5 to 14 days in the frig until I'M READY to bake. I don't have to stress out about it.
