Aunt Deb’s Layered Salad

My Aunt's layered salad YUMMY!  Our family eats it every time we have Italian meals.  It's great to make for pot luck gatherings and can easily be made ahead.  In fact, this layered salad tastes better when made one day ahead of eating it.  

 HERE'S WHAT YOU NEED

  •  1 head of Iceberg lettuce
  • 10 ounces of frozen peas
  • 1/2 cup purple onion, chopped
  • 1/2 cup celery, chopped
  • 1 can sliced water chestnuts 

 Layer the above in a square or rectangular dish.

  • 2 cups mayonnaise
  • 2 teaspoons sugar
  • 1 teaspoons pepper
  • 1/2 teaspoon salt
  • 1/2 cup finely shredded Parmesan cheese
  • 1 cup shredded Mozzarella cheese

Mix the mayonnaise, sugar, pepper and salt together and spread over the layered salad like a seal.   Then spread the two cheese evenly over the mayonnaise topping.  Chill, at least, one hour then serve.

SUBSTITUTION

You could use 1 can of peas, instead of frozen peas. And if you don't have celery on hand, it will still taste great.  Just don't leave out the water chestnuts.
