Baked Tilapia and Spinach Print

fish that's been baked, broiled, blackened or fried is fine with me. It's truly my favorite food, next to spinach, goat cheese, and dark chocolate. NO, there's not any chocolate in this recipe...eww.

The other night, my husband called to report he was trapped in traffic and would pull over to grab Chik-Fil-A. That gave me the chance to experiment with the Tilapia I picked up on sale.

HERE'S WHAT I PUT TOGETHER

  • 1 frozen Tilapia fillet
  • 1 cup frozen spinach, thawed & squeezed dry
  • 1 garlic clove, minced
  • 1/2 fresh lemon, squeezed
  • paprika
  • red pepper flakes
  • salt & pepper
  • goat cheese

Baked Tilapia with spinach 2

Heat the oven to 400F degrees.

Use enough heavy duty tin foil to hold the fillet. Spray foil with nonstick cooking spray.

Squeeze lemon juice over fillet. Generously season fish with garlic, paprika, salt & pepper, and as many red pepper flakes as I can stand. Lay spinach on top, season with salt & pepper. Close up foil so it makes a tent, allow a place for steam to escape. Bake for 15 minutes.

Using oven mitts, remove foil tent from oven, carefully open foil to expose the fillets. Return to oven and continue baking for another 15 minutes until fish flakes very easily with fork and is opaque in center. Top with crumbled goat, and I was ready to eat!

Disclaimer: The photos show the Tilapia topped with additional pesto and green onions. I felt they didn't work like I hoped, so I left them out of the recipe. However, the spicy fish, the hot green spinach and the creamy goat cheese were very good together.
