Banana Oat Muffins Print

I had four very ripe bananas on my counter this morning.  This is what happened.

Bananas: Quick, transform us into something yummy before it's too late!

Jill:  How about Banana Bread?

Jill: Nah, I did a post on that already.  What about banana cupcakes?

Jill: Hey that sounds yummy, but I'll try to make them into healthy breakfast bites and less dessert.

The bananas met the masher in a mixing bowl, and 25 minutes later, we're transformed into healthy Banana Oat muffins. 

 Banana Oat Muffins

HERE'S OUT THE RECIPE PLAYED OUT

Preheat the oven 350F degrees.

  • 1 cup old fashion oats
  • 3/4 cup finely chopped almonds

Toast these two together for 5 to 7 minutes, until lightly browned. Set aside, and bump oven up to 400F degrees.

  •  4 small bananas, mashed
  • 1/4 cup water
  • 2/3 cup applesauce
  • 3/4 cup healthy egg substitute or 3 eggs

Blend together and set aside.

  • 2 1/3 cups flour
  • 3/4 cup brown sugar
  • 1 1/4 teaspoon baking powder
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • golden raisins for the tops

Blend all the dry ingredients, then add the banana mixture.  Stir in oats and almonds.  Fill greased muffin tins with 1/4 cup batter.  Bake for 12-15 minutes.  

For easy clean up, use paper liners.  Be sure to sprits with nonstick spray.
