Carrot Cupcakes

My sweet husband’s birthday was Monday and one of his favorite cakes is carrot cake. Seeing we McKeever’s like to celebrate for days, I turned his favorite cake into cupcakes. He loved this, because it didn’t limit him on how many he could eat.
“A slice of cake visually says this is all you [...]

Oatmeal Raisin Muffins

My picky eating daughter asked if we could bake muffins together. We just happen to have the ingredients for these tasty little bites. They’ve made great snacks for us and they keep getting better with each day. My daughter has eaten more than any of us. I don’t mind, they’re healthy [...]

Mini-Cupcakes Recipe

Yesterday, I shared a great way to pipe cake batter into a mini-muffin pan.  Today is about the traditional yellow cake recipe and creamy frosting I used to make these Kid Friendly Delights.
FOR THE YELLOW CAKE

2 cups flour
1 cup sugar
1/2 cup butter, softened
1 cup milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon [...]

Cupcakes Kids Will Not Waste

For the past four years, I’ve attended my fair share of little kid birthday parties.  I’ve observed and experienced that no matter how delicious the cake tastes or doesn’t taste, it’s the icing that gets all the attention.
Party after party, I watch kids ONLY eat the frosting off their cupcakes.  Leaving behind a half eaten, [...]

Homemade Dinner Rolls

These soft, delicious dinner rolls are ready in one hour from prep to serving.  That’s really not long when considering how long yeast breads usually take to rise, knead, shape, rise again.  (I don’t bake yeast breads for that reason.  I don’t have the time or the patience.)
This recipe doesn’t involve any extra work in [...]

Moist Cornbread Muffins

This was the BEST CORNBREAD MUFFIN THAT EVER LIVED.
It’s gone now, but it’s left behind a memorable experience that my family will not let me forget.
This is a simple cornbread muffin recipe that can easily be sweetened up or made spicy.  From here it can go either direction.  Since I wanted them for their simple [...]

Apple Muffins

These apple muffins are just right for breakfast and as a snack!!!
I went shopping yesterday and bought a new mini-muffin pan.  Right before bed, I got the idea to make something special for my husband to eat on his long commute into work.  I had a small, Gala apple on the counter and [...]

Pumpkin Muffins

. There's more to bake with pumpkin puree than just pumpkin pie.   Oh, you knew this already?  Yeah, but have you tried doing anything with pumpkin puree besides pie?  Up until that experimental batch of Pumpkin cookies, me neither.
Yesterday, I baked up a double batch of Pumpkin Cookies to give away to friends and [...]

Banana Oat Muffins

I had four very ripe bananas on my counter this morning.  This is what happened.
Bananas: Quick, transform us into something yummy before it's too late!
Jill:  How about Banana Bread?
Jill: Nah, I did a post on that already.  What about banana cupcakes?
Jill: Hey that sounds yummy, but I'll try to make them into healthy breakfast bites [...]

Vanilla Pancakes

After making Awesome French Toast from last weekend, I was curious how vanilla would taste in my pancake batter.  My kids thought I made flat cupcakes for breakfast, and of course, they ate every bite!  Notice that this is not a sweet batter, I skipped the sugar, knowing that there would be maple syrup added [...]
