Bran-Craisin Muffins

post thumbnail

As far as bran loaded muffins go, these are pretty good, especially the next day. Like a Fruity Banana Bread, the muffins become softer, more moist, the longer they sit out on the counter in a storage container. I'm trying to mix up my breakfast regimen and try new-old classics.  I've never eaten Malt O'Meal or hot cereal products other than oatmeal.  From my local grocer, I picked up a box of oat... More...

Simple Jalapeno Cornbread Loaf

post thumbnail

After making an AWESOME loaf of Sweet Beer Bread, I had to experiment just a little.  I wanted a sweet and spicy cornbread to go my No Heartburn Chili, so I smashed two ideas together.  This is a dense bread with spicy bits of jalapeno and morsels of sharp cheddar mixed in.  OH and I poured in a delicious Shiner Black Lager for good measure. I liked it! but my family didn't get excited about it. ... More...

Monkey Bread from a Monkey

post thumbnail

Last recipe entry from me from the Hopkins County 4-H Food Show. Isn't it pretty?  It's hard to believe a little monkey, ur I mean, a little kid made this monkey bread. I sure hope they (the AgriLIFE Extension office) ask me to judge again next time.  It was SO MUCH FUN meeting the kids, listening to them spout their nutrition education, while proudly standing behind their prepared dishes.  Those... More...

Simple and Sweet Beer Bread

post thumbnail

Sweet Beer Bread is AWESOME!!! It's SUPER EASY to make & bake and takes very little time to get it on the table.  This a dense bread that is wonderful with brothy soups or toasted with jam on top... *remembering that wonderful breakfast.* Oh and if you have two loaf pans, go ahead and double this recipe.  This bread won't last more than two days.  It's very hard not to slice off a piece every... More...

Simple & quick with a kick! That's how I'd describe these small cornbread muffins.  Great with a bean soup or serve them as an appetizer when entertaining. I combined the recipe for Moist Cornbread Muffins with a jar of jalapeno stuffed olives, then I got out my mini-muffin pan to bake these up.  Seven to ten minutes later, we were ready to eat. HERE’S ALL YOU NEED TO DO Heat oven to 450ºF... More...

Homemade Pretzels

post thumbnail

We had friends over for a German beer & cheese tasting the other night.  It seemed fitting to have a bowl of pretzels on hand for those in between bites, along with a tray of sliced fruits. Except, I didn't know nothing 'bout birthin' no pretzels.  So, I went over to Mizz Francie's and grabbed her Homemade Pretzels recipe.  (I don't know WHY I've slipped into Gone With The Wind, when I started... More...

Using Pita Bread for Pizza Crust

post thumbnail

Forgive me readers, it's been 3 months since the last time I made pita bread.  I've been struggling with the issues of Simple & Fast recipes vs. Simple & Slow.  Not every good meal can be made in 1 hour or less.  Some things takes time.  Some foods are just WAY better made from scratch and they just happen to take a while to become awesome.  This is my reasoning behind making homemade... More...

Homemade Flour Tortillas

post thumbnail

I'm gonna tell you a secret desire I can't shake.  It's a big desire, no doubt expensive.  But I can't get it out of my mind.  Ready? I wish I had a tortilla machine.  You know, one of those that you drop the ball of dough into and it comes out the other end completely HOT & READY TO EAT! Every time I make tortillas, I daydream of opening a tortilla shack, just big enough for the machine,... More...
