Traditional Coleslaw

“Coleslaw” comes from the Dutch koolsla, from kool cabbage + sla salad.  Defined as a simple salad made from sliced cabbage.  But we KNOW it’s not THAT simple, don’t we?
Oh sure, slicing up the cabbage is easy.  Creating the dressing is the hard part!  Getting that balance of creamy, tangy sweetness to moisten all that [...]

Awesome Fruit Salad

This AWESOME fruit salad is PERFECT on a hot day! It’s really hard to stop eating it.
I threw this together to serve on the side of my experimental breakfast, whole wheat English muffins turned into French toast. (I’ll tell you about them in the next post.)
There’s just the right amount of sweet, juicy fruits and [...]

Caesar Chicken Salad

I enjoyed this salad for three days in a row! I changed up the salad dressing and shredded cheese topping each day, so I wouldn’t feel like I was eating the same ol’salad.
I used the extra Caesar Chicken fillets from the night before to make this salad filling and keep away the hunger pains [...]

Spinach and Roasted Garlic Salad

The roasted garlic is sweet and mild in this salad. And no, you don’t the papery skin, eww!
The original recipe for Spinach & Roast Garlic Salad came from the Italian cookbook I keep mentioning. It called for toasted pine nuts. Unfortunately, they were burned in the toasting process and we had [...]

Holy Guacamole!

Oh yea, it’s as good as it looks and zesty too!
I found this delicious version of guacamole in one of my favorite children’s books, Chicks and salsa by Aaron Reynolds. Of course, I did alter it a bit to suit my fancy and it turned out beautifully and all the chicken’s said, “Ole!”
HERE’S [...]

Roasted Chicken Salad

Oh yea? Well, pack THIS in your lunch box!
I've just finished roasting up a batch of chicken breasts for the week ahead.  I had a little red bell pepper and salad greens leftover from the Chicken Rollups dinner, so I put them together for lunch.
I roasted the chicken breast my usual way, except I [...]

Frozen Cranberry Dessert

The first time we tried this dessert was at a pot luck holiday party.  The best thing about pot lucks is there's always something new to try.  For the adventurous types, this is a lot of fun.  For picky eaters, it's spells an evening of loading up on chips.  For those with highly trained taste [...]

Mexican Stack Salad

I devoured a Mexican Stack salad for lunch today.  It has an odd combination of ingredients, but MAN, IT IS GOOD!  The Mexican Stack Salad is perfect for pot luck gatherings.  If you have enough guests attending, each person picks one or two ingredients to bring to the meal.

HERE'S ALL YOU NEED FOR THIS [...]

Tuna Salad for the Ladies’ Luncheon

Nothing says Ladies' Luncheon like finger sandwiches, ice tea and rich desserts.  Last week, I signed up to make tuna salad sandwiches for my Community Bible Study class.  I love a GOOD tuna salad sandwich.  No other sandwich is more filling.
Now, a really good tuna salad sandwich must be made to be sweet and salty [...]
