Homemade Dinner Rolls

These soft, delicious dinner rolls are ready in one hour from prep to serving.  That’s really not long when considering how long yeast breads usually take to rise, knead, shape, rise again.  (I don’t bake yeast breads for that reason.  I don’t have the time or the patience.)
This recipe doesn’t involve any extra work in [...]

Chicken, Spinach Pizza

As some of you already know, Friday night is movie and a pizza night for my family. It’s one of our favorite nights we spend as a family. The kiddos always want their ham with extra cheese, while Chaz and I like to change it up a bit each week. This [...]

Chicken and Black Bean Salad

This week, I’m on a salad kick for lunch.  This salad combination is so good, I’ve eaten it for 3 days in a row!
It helps to have leftover cooked chicken on hand.  So, I’ll first mention how I cooked the chicken.
HERE’S ALL YOU HAVE TO DO

1 pound chicken tenders or 2 chicken breasts
1 1/2 tablespoons [...]

French Apple Pie

This recipe is SO GOOD!  The Granny Smith apples really give a tart freshness that calls out, "This is the way apple pie should always taste!"
There's pie crust on the bottom and a crumble on the top, with hot apple goodness in between.  Below you will see I made mini pies.  They're perfect for those [...]

Moist Cornbread Muffins

This was the BEST CORNBREAD MUFFIN THAT EVER LIVED.
It’s gone now, but it’s left behind a memorable experience that my family will not let me forget.
This is a simple cornbread muffin recipe that can easily be sweetened up or made spicy.  From here it can go either direction.  Since I wanted them for their simple [...]

Fresh Beef Chili

With all these cold, blustery days, a hardy pot of chili sounded good to eat over the weekend.  My friend, Anne, brought over fresh, ground beef that was grown right here in Sulphur Springs, Texas.  Thanks Anne, now we know the difference between locally grown and store bought beef.
That beautiful, moist cornbread muffin in the [...]

Chicken Spaghetti with Spinach

The original recipe is called Bistro Chicken from Kraftfoods.com.  However, my husband is not a fan of mushrooms, so I had to change it up a bit.  I believe this is the fastest and tastiest, pasta dinner I’ve ever put together.  (Just sauce and pasta doesn’t count.)
I made this dish the other night [...]

Apple Muffins

These apple muffins are just right for breakfast and as a snack!!!
I went shopping yesterday and bought a new mini-muffin pan.  Right before bed, I got the idea to make something special for my husband to eat on his long commute into work.  I had a small, Gala apple on the counter and [...]

Spinach Quiche with Gruyere

In the mood for quiche, again, and with plenty of ready made pie crust dough on hand.  I put together this delicious spinach quiche with gruyere cheese.  My son walked by as I was photographing it and said, "That smells great!  Can I have a bite?"  I thought,  uh yea, quick before he asks what's [...]

Roasted Garlic Hummus

I served up a zesty batch of hummus to share with friends for New Year’s eve.  I used a combination of recipes that I thought would give a traditional flavor.  It was my first time to make it and I only had a few memories of really good hummus to go on.
The roasted garlic is [...]
