Chicken and Black Bean Salad

post thumbnail

This week, I'm on a salad kick for lunch.  This salad combination is so good, I've eaten it for 3 days in a row! It helps to have leftover cooked chicken on hand.  So, I'll first mention how I cooked the chicken. HERE'S ALL YOU HAVE TO DO 1 pound chicken tenders or 2 chicken breasts 1 1/2 tablespoons olive oil 1 teaspoon salt and pepper Heat olive oil in pan on med. high heat.  Carefully add... More...

Moist Cornbread Muffins

post thumbnail

This was the BEST CORNBREAD MUFFIN THAT EVER LIVED. It's gone now, but it's left behind a memorable experience that my family will not let me forget. This is a simple cornbread muffin recipe that can easily be sweetened up or made spicy.  From here it can go either direction.  Since I wanted them for their simple corn flavor in chili, this recipe is perfect. The original recipe called for buttermilk,... More...

Fresh Beef Chili

post thumbnail

With all these cold, blustery days, a hardy pot of chili sounded good to eat over the weekend.  My friend, Anne, brought over fresh, ground beef that was grown right here in Sulphur Springs, Texas.  Thanks Anne, now we know the difference between locally grown and store bought beef. That beautiful, moist cornbread muffin in the middle of the bowl was the perfect bread for this chili. HERE'S ALL... More...

Butternut Squash Chili

post thumbnail

Being completely honest here, I wasn't too sure about this recipe.  I've been experimenting with new flavors on my family and it's been hit and miss.  Naturally, I spare you of my misses and only post recipes that go over well.  If my family tells me they wouldn't ask for it, it doesn't make it to this blog.  So, with that being said, this recipe is a winner! The original recipe was torn out of... More...

Chicken Spaghetti with Spinach

post thumbnail

The original recipe is called Bistro Chicken from Kraftfoods.com.  However, my husband is not a fan of mushrooms, so I had to change it up a bit.  I believe this is the fastest and tastiest, pasta dinner I've ever put together.  (Just sauce and pasta doesn't count.) I made this dish the other night after coming home from my friend's house too late.  I had just 35 minutes to get a hot meal... More...

Simple Apple Muffin Recipe

post thumbnail

These Simple Apple Muffins are satisfying anytime of the day.  We've been eating them all day long.  Try them and see for yourself. Right before bed, I got the idea to make something special for my husband to eat on his long commute into work.  I had a small, Gala apple on the counter and just enough roasted pecans to make muffins. So, that's what I did. This apple muffin recipe is not sugary... More...

Spinach Quiche with Gruyere Cheese

post thumbnail

In the mood for quiche, again, and with plenty of ready made pie crust dough on hand.  I put together this delicious spinach quiche with gruyere cheese.  My son walked by as I was photographing it and said, "That smells great!  Can I have a bite?"  I thought,  uh yea, quick before he asks what's in it!  HE LIKED IT! "Mikey likes it!"  I couldn't help snap of picture of the moment.  The photo... More...

Roasted Garlic Hummus

post thumbnail

I served up a zesty batch of hummus to share with friends for New Year's eve.  I used a combination of recipes that I thought would give a traditional flavor.  It was my first time to make it and I only had a few memories of really good hummus to go on. The roasted garlic is my favorite part of this recipe.  It's super easy to roast garlic.  Going the extra step to prepare it was well worth it.... More...

Simple Creamy Lemon Dessert

post thumbnail

Doesn't that look cold and creamy?  Let me tell you, it's wonderfully delicious!   I was reading through a great blog the other day, FoodWishes.com.  I learned from Chef John how to make Lemon Curd.  I was particularly interested in dipping ginger snap cookies in it, and to learn how to make a dessert sauce.   If I could go back eleven years with the self... More...

Quick Black Bean Burgers

post thumbnail

I'm trying out two new recipes this morning.  So, I thought to put together a super simple hot lunch.  The hubby and I love Morningstar's Black Bean Patties.  In about 20 minutes, we were eating black bean cheeseburgers and fries.  The kiddos had their favorite chicken nuggets and fries.  I consider this worth posting because the lunch was quick to prepare, hot and flavorful. Sometimes, these... More...

Leftover Potatoes and Broccoli

post thumbnail

Sometimes there's too much of one leftover.  Do you get that occasionally?  Last week's party left us with a bit too much mashed potatoes to eat.  I started our nights of leftovers with this recipe.  It's so super simple, I almost didn't post it.  However, it was tasty, comforting, nutritious, and my kids ate it up.  Therefore, it qualifies for a posting. HERE'S ALL YOU NEED TO DO leftover... More...
