Steak and Salad Dinner

This is a beautiful and delicious meal made on the fly. Let me tell you, I had no plans to put this together. I was at the grocery store and happened to see they had boneless sirloin steaks on sale. I picked up one small steak (.88 pounds for $4.83) to feed [...]

Holy Guacamole!

Oh yea, it’s as good as it looks and zesty too!
I found this delicious version of guacamole in one of my favorite children’s books, Chicks and salsa by Aaron Reynolds. Of course, I did alter it a bit to suit my fancy and it turned out beautifully and all the chicken’s said, “Ole!”

Have you ever tried Nature Valley Pecan Crunch granola bars with peanut butter spread on top?
They're perfect for a quick breakfast or afternoon snack.  My kiddos prefer eating granola bars this way and they have good time spreading on the peanut butter.  Tastes even better with a glass of orange juice or milk.

I discovered this week the delightful combination of cinnamon raisin bagels, cream cheese and honey. Not too much honey, just a light drizzle. I use the banana slices to sop the [...]

Roasted Chicken Salad

Oh yea? Well, pack THIS in your lunch box!
I've just finished roasting up a batch of chicken breasts for the week ahead.  I had a little red bell pepper and salad greens leftover from the Chicken Rollups dinner, so I put them together for lunch.
I roasted the chicken breast my usual way, except I [...]

World Nutella Day

I heard of Nutella for the first time, about a year ago.  I had watched some program about International Chefs cooking in fancy restaurants, but still having to offer condiments that are below Foodie par.  There was an Italian chef in California who offered Nutella on toasted baguette slices.  He said, "Nutella to Italy [...]

Using Baked Penne As Pizza Toppings

This is what happens when I have one small pizza crust on hand and four people to feed. I felt like eating my favorite pizza toppings, but I knew my kids wouldn’t go for it. I ended up baking the kiddos their favorite cheese & ham pizza. My husband and I ate [...]
