Chicken Rollups

Just to keep you in the know, Simple Daily Recipes is spreading like a wildfire and growing intensely every day.  I have hired my first Intern to help me keep up, Anna L.  You will see her name pop up at the end of emails and later show up in contributing posts.  She and I cooked together for the first time and this recipe was the result.

This recipe was inspired from another recipe found on the back of a Kraft Italian blend cheese package.  It looked simple enough to make and was something new to try for dinner.  Everyone loved the goat cheese and red bell pepper filling.  The chicken was tender and moist and that salad on the side was all we needed to complete this meal.

HERE'S ALL YOU HAVE TO DO

  • 2 oz. cream cheese, softened
  • 1/2 cup Kraft finely shredded Italian Style cheese blend
  • 3 oz. peppered goat cheese
  • 1/2 cup finely chopped red bell pepper
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon garlic salt
  • 4 boneless, skinless chicken breast halves, pounded to 1/4 inch thickness
  • 1 cup spaghetti sauce.
  • 1/2 cup Kraft finely shredded Italian Style cheese blend

Heat oven 400ºF degrees.

Mix the first six ingredients together; divide evenly among breast pieces.  Place cheese mixture on short end of each chicken piece' press into chicken lightly.  Roll up chicken, tucking in ends around filling to completely enclose filling. Otherwise, the cheese WILL come completely out of rolled chicken, not good.

Place, seam sides down, in 13x19 inch baking dish sprayed with nonstick spray.  Pour spaghetti sauce evenly over chicken; cover with foil.

Bake 30 minutes, or until chicken is cooked through.  Remove foil; sprinkle chicken with remaining 1/2 cup of shredded cheese and bake 3 to 5 more minutes.

    Congratulations on the success of your blog, Jill. It must be hard to keep up with all this delicious cooking. :-p I love chicken and I love chicken rolls so I will squeeze this recipe in my February recipes to do list. So much delicious food, so little time :(

      That’s SO true, Ben!
      Gone are the days when we said, “I don’t know what to cook for dinner?”
      All anyone needs is a printer and a good internet connection, and they’re set for life.

      I often consider how published cookbooks fair in sales nowadays, when there are soooo many
      food/recipe blogs. Look at Food Network’s TV chefs, they post every recipe from every aired show.
      Why publish a cookbook at all?

      As for the consumer or home cooks, “Why buy the cow when the milk is free?”
