This is one of those casseroles that you intend to make last a couple of meals.  However, it’s so creamy and delicious, your family ends up eating the whole dish.

  • 1 box chicken flavor stuffing mix
  • 6-7 yellow squash cut into 1/2 inch slices
  • 4 cups cooked chicken, cubed
  • 1 package (8ounce) cream cheese, softened
  • 1 can cream of chicken soup
  • 2 cups grated cheddar cheese

Preheat oven 350oF

Prepare stuffing as directed on box. Steam or simmer squash until almost tender. Stir together chicken, cream cheese, soup, 1 cup cheese, half prepared stuffing mix.

Pour mixture in 13×9x2 casserole dish coated with non-stick cooking spray. Top with remaining cheese and stuffing mix. Cook uncovered at 350oF for 30 minutes.
