Hominy Among Friends

NOBODY, and I mean, NOBODY! has made hominy taste this AWESOME!
Hot or cold, this arrangement of hominy, green chilies, cilantro and tomatoes with chipotle peppers is very hard to stop eating. I read through so MANY hominy recipes that all seemed to be lacking in color and bright flavors. So, I went off on my own and put what I wanted to taste around the hominy AND I won my husband over to hominy! WOOHOO!
If you have the time, make this ahead, such as that morning or the day before serving. By day three, it's awesome cold! I totally see this recipe as a substitution for potato salad at a potluck luncheon or dinner.
HERE'S ALL IT TAKES
- 1 (36 ounce) can hominy, drained well
- 1 (4 ounce) can chopped, mild green chilies
- 1/2 cup yellow onion, finely chopped
- 1/4 cup diced tomatoes with chipotle peppers
- 1/4 cup fresh cilantro, finely chopped
- 3 slices of cooked bacon, chopped
- 3/4 cup light sour cream
- salt and pepper to taste
- shredded cheddar cheese, just enough to add color on top
Heat oven to 350ºF degrees.
Mix all the ingredients together, EXCEPT cheddar cheese, in a medium bowl. Season with salt and pepper to taste. Pour into an 8 inch x 8 inch pan. Top with shredded cheddar cheese, just enough for color. There's a lot of flavors in this dish, we don't want to smother them with cheese.
BAKE 25-30 minutes, until hot and bubbly. Allow to cool a bit before serving.

NOTE: When this first comes out of the oven, it will have a little liquid on the bottom. HOWEVER, if it has been allowed to sit in the refrigerator until the next day, the liquid is reabsorbed and will have a potato salad texture slash creaminess.
It reheats beautifully in the microwave at 80% power or eat it cold or room temperature. I eaten this all 5 ways,
- Fresh out of the oven
- Leftover hot
- Leftover cold out the frig
- Leftover room temperature
- Day three, eating what's left out of a cold pan
and this dish just kept getting better and better!

GASP! I’ve never had hominy in any other form but just plain old hominy. This looks fantastic!
I could eat it plain, no problem, but not everyone can. I wanted to have hominy, but knew I would have to make it differently for others to find it appealing.

This looks and sounds wonderful. I must try it as son (19) asked “what is hominey” while at the store just last week! I remember eating it as a child and guess I have not given son that opportunity!
Looks great Jill! I haven’t tasted hominy because it always looked rather bland. This recipe changes that!!!
This looks like another good one except I’m not thrilled with sour cream maybe I could tone it down with some cr of chicken soup. What do you think? I like a potato dish made with soup, sour cream and cheddar cheese. Yep I think I’M TALKING MY SELF into it. Darn nails they must be getting too long again I keep hitting the caps key. Oh well we gotta take the good with the bad.

This sounds so good. I love my Mom's recipe of a good pork sausage browned and a can of hominy and chicken pozole soup so now I have something new to try!

1 Large Can of Hominy
Brown the Sausage, then add the drained hominy.
I have sauted onions and green peppers but it is good just plain
Chicken Pozole Soup
3-4 Cups of cooked cubed or shredded chicken
1 medium onion, chopped
1 garlic cloves, minced
2 ( 14 oz. ) cans hominy, drain and rinse
1 Tablespoon Chili Powder
1 teaspoon Cumin
½ teaspoon Oregano
1 (4 0z.) can green chilies
4 Cups Chicken Broth
2 T. fresh lime juice w/ a little zest.
A handful of cilantro thrown in at the end
Sauté onion in sprayed pot , adding garlic in last few seconds then add spices and remaining ingredients.
Serve with lime wedges, shredded cabbage, shredded cheese, sour cream, shredded radishes , taco chips hot sauce, chopped onion and cilantro to be added as desired
Lime and cilantro are a must and sometimes I like cheese, onion and chips
How long to simmer once all the ingredients are together?
It is really ready in minutes. Everything is already cooked so I give it maybe 10 minutes to mellow in the spices. Some might like it to cook longer but I think it is better fresh made instead of a long simmer.
