Frozen Fruit Slush

orangestraw2thb.jpgToday, my son's karate group is having a pot luck-swim party at the city pool.  We are new to the group and are looking forward to getting to know everyone better.  It being a pot luck bash with strangers, I have a confession.

I have, with all my vanity, tried to figure out what great recipe I could whip up that would express my personality, talents, a lifestyle appearance of eating healthy that actually would be fitting for the party & tastes great!  

Vanity has taken over! Can you believe this? What happened to the woman inside that could care less what other's think?  What happened to my simple joy of serving others?  GONE! Wasted, burned to ashes by vanity.

Okay, I feel SOOO much better now, thank you for listening.  You're such a good friend to put up with me in moments like this, really.  

So, what did I decide to make for the pot luck swim party?  Well first, another confession, I did not create this recipe.  This was passed to me from a Mom who does not cook, much or mostly at all.  It's totally refreshing and absolutely perfect for an outdoor eating!

FROZEN FRUIT SLUSH

1 1/2 cups sugar
2 cups warm water
1 cup cold water
Juice of 3 large lemons (1/2 cup)
1 cup orange juice
1 large can of crushed pineapple
3 bananas, sliced
1 pint strawberries, sliced

In a separate bowl, dissolve sugar with warm water.  Assemble the remaining ingredients in 13×9x2 casserole dish and freeze.  Set out 1/2 hour before serving.

Variations:  Dissolve the sugar in warm water in a pitcher, then add all other juices.  Fill paper cups with fruit first then pour juice mixture over fruit. (Honestly, I have no idea how many fruit cups this will make.  It depends on the size of the cups and how much fruit you use to fill them.)

    Okay, this recipe was a BIG HIT! I should have taken recipe cards with me to the party. I’ll know better next time.
    Also, next time I make this, I want to try grape juice and frozen mixed berries instead of orange juice, pineapple, and grapes.
