This best way I can describe this is, is…well, it’s reminds me of bread pudding without the bread.

It’s cool and creamy.  The tender sweet peaches with the crunchy granola and the cinnamon mixed with the vanilla yogurt are enough to make you groan out loud.  Not like you’re shampooing your hair in that old TV commercial, not THAT much groan, but more like, I’m home and my Momma just made me something good “Mmmmm.”

I threw this together the other day for a sweet dessert with zero grams of guilt. It worked great for breakfast, too.

HERE’S ALL IT TAKES

  • 1 can peaches in light syrup
  • 1/4 cup dried cranberries
  • 1/8 cup golden raisins
  • 1 teaspoon cinnamon
  • 1 carton non-fat Vanilla yogurt
  • 1 serving package (2bars) Nature Valley Pecan Crunch Bars, crumbled

In a small bowl, mix peaches with the syrup, cranberries, raisins, and cinnamon together and allow raisins to plump up in the peaches’ light syrup.  I stored it the frig about an hour before dinner.  When ready to serve, just start with the yogurt on bottom, top with fruit, then sprinkle crumbled granola bar on top.

Oh yea, baby.  Let’s eat!
