Holy Guacamole!
Oh yea, it’s as good as it looks and zesty too!
I found this delicious version of guacamole in one of my favorite children’s books, Chicks and salsa by Aaron Reynolds. Of course, I did alter it a bit to suit my fancy and it turned out beautifully and all the chicken’s said, “Ole!”
HERE’S ALL I DID
- 1 large garlic clove, finely minced
- 1/4 cup finely chopped onion
- 1/2 cup chopped cilantro
- the juice of 1 lime
- 2 avocados, cut into cubes
- 1/2 teaspoon salt or more to taste

A HANDY TIP
A simple trick to cutting an avocado into cubes; after removing the seed, score the flesh in a criss cross pattern then run a spoon around and under the flesh to remove it from the skin.
Bring all the ingredients together in a small bowl, toss lightly. You can mash half the avocados and leave half in cubes to make a chuncky style dip. It’s all up to you. Serve immediately.
If you’re planning ahead, cover the guacamole with plastic wrap, being sure the wrap clings to the dip and the sides of the bowl. This will help keep the dip looking fresh.

I love guacamole, I love anything with avocado in it. I think avocados are the best fruit ever. This guacamole looks delicious. Have you ever tried to make it with tomato? Yum yum!

I think I’ve had it with salsa mixed in - but not chopped tomatoes. do you have a recipe?
I tend to buy two avocados to make guacamole, and one to eat while I’m making guacamole.
