Kid Comfort Foods

My little man, Max, was feeling low the other day. When I asked him what he wanted Momma to fix for him he said, “I want that red soup from the can, goldfish crackers and a hot cheese sandwich.”
What can I say? We all have our comfort foods that get us out of our slumps. And let’s be honest for a moment or two, not every comfort meal comes from scratch. When I was small, my comfort meal was Memaw’s chicken and rice topped with chow mein noodles.
No, she didn’t boil up a chicken for hours and pull together something fancy. She was a working grandmother with a sick kid on her hands. She whipped out the Campbells Cream of Chicken soup, a small can of chicken, (yes, that’s right, canned white chicken meat) and cooked up a side of Minute rice. I’ll never forget, she would use milk, instead of water, in the soup and season it with curry powder and sage…mmm. It’s still is my favorite meal when I have a cold.
For Max’s red soup, I add 3/4 can of milk instead of water, just like my Memaw did for me. It’s makes for a thicker, creamier soup that feels good going down.
What is it you like to eat when you’re feeling low? What do your kids like to eat?

My grandson loves tomato soup with Cheetos on top, and a grilled cheese (sometimes with a slice of turkey or ham) sandwich.
I’ve seen pictures of tomato soup with popcorn and various things on top. Even potato chips are good on it.
I think that our milk is so watered down now, that it is hard to get that good creamy taste we once were able to get in our soup, etc. I was having trouble with the milk in my soup turning to clabber or looking spoiled and someone said that it is because of the lack of cream in our milk, now. So use half and half, or add some cream instead of just using plain milk. I haven’t tried that. I’m just cooking it lower and for a shorter time.
I used to bring my soup to a boil, then let it simmer a while, with no problem. Now, I have to just get it barely warm, then move it off the burner, or my milk ruins.
I liked your suggestion of using more milk in the cream of chicken soup. I’ve been using about 1/2 can of water, then filling the can the rest of the way to about 3/4 full with milk. It seems a little on the watery side that way.
My comfort food is ice cream, usually vanilla, sometimes with additions like a banana! Also potato chips or french fries, depending on what I feel like.

I’ve never experienced clabbering, but I do just warm it up enough for the kids to eat. They don’t like anything too hot, right?
I’ve also tried adding a fourth cup of sour cream whisked in after I remove it from the heat. Now, that makes a CREAMY soup….yummEE.
