I love it. It's not time consuming. It's completely gratifying. Any cook that is driven by the desire to eat that which was grown from a garden, is free of artificial or cheap corn syrup sweeteners, and wants to preserve the harvests of a great growing season, would think nothing of the act of home canning. If anything, the video helps me appreciate someone else's efforts when they hand me a jar they processed themselves. Realistically, I'm more likely to freeze foods then I am to can them. I like the captions. The canning process seems very time consuming, but I can imagine how nice it would be to go into your pantry and pick out a nice jar of canned produce.
