My Kids Fav Food: Black Bean Nachos
I make black bean nachos EVERYDAY for my picky daughter. She's four and 3/4 years old. She has loved and eaten black beans since she was one. I kid you not.
Oh sure, she eats other foods, but she always wants something involving black beans for at least one meal a day. She's particularly fond of Ranch Style Black Beans, so am I. I've made many attempts to cook black beans but I can't get them right. So for me, it's easier, faster and less stressful to open up the can.
HERE'S HOW MAGGIE LOVES HER NACHOS
- 1 can (15oz) Ranch Style Black Beans
- 1 package shredded Mexican blend cheese
- 1 bag Tostidos tortilla chips, rounds
First drain half the liquid from the black beans. Pour into a one cup food processor, run for 30 seconds, until almost pureed. Move to a good air tight container. Spoon about two teaspoons of beans onto each chip. Top with maybe, 2 teaspoons of shredded cheese. Microwave at 80% power for 35-45 seconds. Do not cook them on full power; it overcooks the beans & cheese and it doesn't look appetizing at all. Serve with a dollop of sour cream on each chip or on the side.
I have no idea how many nachos one can of beans will make. I could guess it makes enough for 20 nachos?
In the picture above, I was out of shredded cheese at the time. I substituted with Borden's cheese sticks. The kids thought they looked cool and proclaimed lunch as "party time!"
