Roasted Roast, Sunday Lunch

This is a really easy, simple dinner recipe, we ate for Sunday lunch.

It was a cold Sunday morning and we slept in. We decided to do what we always do on Sunday mornings; lounge around drinking lattes, reading our favorite blogs.  The kids were already glued to the SpongeBob marathon.  There was a nice roast in the frig, I got on sale, waiting to go in the slow cooker.  But I realized, this was "Sunday," the day when we eat roast at LUNCH.  I couldn't put it in the slow cooker, it had to go in the oven.  I had two hours to get'er done.

HERE'S ALL IT TOOK

  • 3 pound roast, approximately
  • 2 cloves of garlic, sliced
  • 1 medium onion, sliced
  • 4 gold potatoes, cut into 1.5 inch pieces
  • 1/4 cup Worcestershire sauce
  • olive or vegetable oil
  • salt & pepper
  • 1 tube of Pillsbury Home style biscuits

Heat the oven to 350F degrees.  In a 13×9 inch casserole dish, sprayed with nonstick spray, season the roast on both sides with generous amounts of salt and pepper.  On one side of the roast, cut one inch slits to hold garlic slices (see picture).  

In a medium size bowl, place all the cut up potatoes and onions together, season with 3/4 teaspoon salt, 1/4 teaspoon pepper, drizzle with 1- 2 tablespoons of oil.  Stir around for a good coating.  Pour vegetables around the roast.  Cover the dish with foil and bake approx. 1.5 hours, until meat is fully cooked.  Remove from oven, allow to stand while you get the biscuits ready.

Bump up the heat to 400F degrees and bake biscuits according to the package.  

The roast was tender, the roasted potatoes were AWESOME with the caramelized onions.  Those biscuits were perfect for soppin' up the meat juices off our plates.  Mmmm, it was good alright.

The next day, I turned the leftover roast into Barbecue sandwiches.  Those were really good, too! 

I hope you get a chance to make a roast this weekend, if you like them.  Roast leftovers are always good for cold roast beef sandwiches and barbecue sandwiches.  It's my favorite meat on a budget when I can get it on sale.
