Simple Zucchini Bars Print

HERE'S ALL IT TAKES

  • 2/3 cup packed brown sugar
  • 1/4 cup butter, softened 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 small zucchini, shredded and drained (1 cup)
  • 1/2 cup chopped nuts (optional)

Heat oven to 350ºF. Grease square pan, 8x8x2 or 9x9x2 inches.  Mix brown sugar, butter , vanilla and egg in large bowl.  Stir in flour, baking soda, cinnamon, cloves.  Stir in zucchini and nuts.

Spread batter in pan.  Bake 25 to 30 minutes or until toothpick inserted in center comes out clean.  Cool completely.  Frost with Clove-Spiced Frosting.  Cut 6 row b;y 4 rows.  Yields 24 bars.

Clove-Spiced Frosting

  • 3/4 cup powdered sugar
  • 1 tablespoon butter, softened
  • 1/8 teaspoon ground cloves
  • 3 to 4 teaspoon milk

Mix all ingredients until smooth and spreadable.

    Hi! Jill, told Sandra the next time we were invited to her son’s for supper I would make the zucchini bars. Too dangerous to have around the house for the 2 of us….we have been doing weight wathers since the 1st of the year. And the people at work are getting fat, too. It’s the pits being a cook and having to worry about getting fat! Susan

    These zucchini bars taste a lot like carrot cake. I am surprised by how similar they are. I would never guess that the recipe has zucchini in it. At least when I eat two pieces I can claim there are vegetables inside :)

    Charles, Your stretching the veggie part there, but no worries, I believe chocolate is a food group, and tequila comes from an herb. Just depends on how you look at things! Susan

    I agree, chocolate is a MAJOR food group! Memories from my 20s forbids me to think about tequila. I’ll drink a cup of spicy chocolate anytime.

    Oops! Sorry, Charles, anything with a vegetable in the recipe title has to be good for you. Besides I believe anything fixed with love negates any bad effects. Susan

    Charles, once again I have to apologize. I made these bars for guests for supper tonight, and I cannot stop snacking. I really may have to take the extra lap around the block this evening. Sandra’s response: “Do we really have to share these?”

    But let me tell you what I did…..after I realized 1/4 c. butter is not 1 stick (now how long have I been cooking?), I doubled the rest of the recipe. I only had one zucchini so I shredded an apple….also, I ground my whole (fresh, organic) cloves in my spice (aka coffee) grinder. Makes a world of difference. And baked it in a 9 x 13 pan. Talk about a happy accident.

    And I made a test pitcher of Peach Tea for lunch…..I was informed by said cousin that I would be making another pitcher for company. Also, we use stevia instead of sugar, but it is still a very good tea.

    The rest of the meal:
    Baked Crock Pot Chicken
    Steamed Broccoli with cheese sauce
    Dinner salad with strawberries
    Fresh baked Vermont Cheese bread (only I think Sandra only buys the cheese from Oregon.)

    Candy,
    My cousin, Sandra and I call this the 2 Piece Cake. I have made and served it several times. Always have been asked for another piece or more. It doubles really well, just use a 9 x 13 pan.
