These simple zucchini pancakes make a great side dish. They're light and low in carbs and are absolutely delicious!

HERE'S ALL IT TAKES

Servings: Makes 20 small pancakes Time: 20 minutes

  • 2 medium zucchini, grated
  • 2 shallots, finely chopped
  • 1/4 cup fresh chives
  • 1/4 cup parsley, chopped
  • 1 garlic clove, minced
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 6-8 tbsp whole wheat flour
  • kosher salt and fresh pepper to taste
  • olive oil spray

Grate the zucchini using the large holes of a cheese grater and place in a large bowl. Add flour, shallots, garlic, parsley, chives, eggs, cheese, salt and pepper.

Heat a large skillet over medium heat and spray oil to cover pan. Drop 1 tablespoon of the batter into the skillet to form each pancake. Cook about 2 minutes on each side until golden brown. Set aside and keep warm. Spray more oil in the skillet as needed, and continue with remaining batter.

    Too bad zucchini’s not common here in the Philippines. But this reminds of a street food we have that’s a mix of shredded vegetables (papaya, chayote) and batter that is deep fried. Can’t recall what’s the name though.

  8. These are quite yummy and a favorite of everyone here – we love to have them with Chicken, beef and also with soups and sandwiches!

    A pita place served Tatzichi, a tangy yogurt spread. It would go well with these. Not sure if that’s the same as what Peter mentioned. Peggy

    Just found it on the internet. Peter’s a better speller than I am. Tzatziki. It’s a yogurt, garlic, mint and cucumber sauce. It is really good. Peggy

    I think that these were really bad! I’m sorry but I just think these are absolutely terrible. Are we allowed to have opinions? Freedom of speech, first amendment in the constitution. I’m sorry if you are offended!
