home-ec-cooking-class-1928.jpg There's nothing new under the sun here, but I wanted to share my favorite quick, comfort meal.  The difference between this recipe and the traditional ones is that you will be eating in about 35 minutes!

This recipe will use all that broth you saved from making your own precooked chicken.

HERE'S WHAT YOU NEED

  • 1.5-2 qts. chicken broth
  • 3 tablespoons shortening
  • 2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 1/2 to 3/4 cup milk
  • 3 to 4 cups precooked chicken, thawed & chopped

In a large cooking pot, bring chicken broth to a boil.

Cut shortening into flour, baking powder, and salt with a food processor until mixture resembles fine crumbs.  Add milk while processor is going until it forms a ball.  Turn dough out onto a well-floured surface, and knead.  Pat dough to 1/2 inch thickness (no thicker.)  Cut into 1 inch squares with a pizza cutter.

Drop dough, one piece at a time, into boiling broth, gently stirring after each handful.  Cook uncovered 10 minutes.  Stir in chicken.  Cover and cook 10 minutes longer.

You are ready to eat! Come back and let me know what you thought of this recipe.
