Susana’s Mediterranean Soup Print

Susana R. I made this soup today just trying ingredients and it came out awesome! I am calling Mediterranean Salad Soup. Contains complex carbs and protein along with green veggies...very low in calories!

TRY THIS OUT!

1/2 of Large Pot--Water
1 can Chicken Broth
1 can  Beef Broth (Optional) if you opt for beef  OR use 2 cans chicken
1/2 can crushed italian tomatoes in juice
1 cup fresh parsley, chopped
1 cup fresh spinach
1 cup green zucchini squash
1 cup fresh romaine lettuce
1 cup iceberg lettuce
1 cup fresh broccoli
1 cup grape tomatoes
1 cip lima beans
1/2 can artichoke hearts

Seasonings:
1 tablespoon garlic powder
1 teaspoon cumin
1/4 cup white vinegar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon blackened seasoning
1 teaspoon lemon pepper
1 tablespoon cracked bay leaf
3 small- grilled chicken breast (already cooked)

In large pot filled halfway with water, add chicken broth and beef broth. Bring to a boil and add lima beans. Cook for 10 minutes.

In small bowl mix all dry seasoning ingredients with italian tomatoes. stir. REDUCE HEAT to simmer,  add tomatoes mixture, vinegar, and cracked bay leaf to pot. Then add chicken and all veggies!

Cook for 30 minutes. Enjoy! Optional ---add grated cheese, black olives, capers for garnish. Makes 10 servings.
