The Coffee Haus Cookies
My husband and I met in a coffee house, called what else?
Coffee Haus. I worked as the manager and he was looking for a job. When we met up for the interview, we talked for 3 hours. I had no idea I was interviewing my soul mate. I was only looking for someone who was just like me that I could spend long hours working next too. Ten months later, we were married.
Coffee Haus had these cookies brought in that were our absolute favorite snack while working. They were huge and loaded with delicious goodness; chocolate chips, pecans, and coconut. I baked a batch yesterday. Charlie was immediately sent back to our days at Coffee Haus. Yeah!!! They turned out perfectly.
HERE'S THE COFFEE HAUS COOKIES
- 1 cup packed brown sugar
- 3/4 cup sugar
- 1 cup butter, softened
- 1 teaspoon vanilla
- 2 eggs
- 2 1/2 cups flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup M&Ms chocolate candies
- 1 cup coconut
- 1 cup toasted pecans, chopped
- 1/2 (12 oz) package semi-sweet chocolate chips
Heat oven to 375F degrees. Beat sugars and butter in large bowl with mixer on medium speed until fluffy, about 3-5 minutes. Beat in vanilla and eggs. Stir in flour, baking soda and salt. Stir in M&Ms candies.
KID FRIENDLY RECIPE
Divide the dough at this point. Bake half the dough as directed below.
BACK TO THE GROWN UP VERSION Stir coconut, pecans and chocolate chips.
Drop dough 1/4 cupfuls about 2 inches apart on ungreased cookie sheet. Bake 11-14 minutes to until edges are light brown (middle will be soft). Cool 3-5 minute; remove from cookie sheet to wire rack.
Don't forget a glass of cold milk. Do I even need to say that?
