Tuna Salad for the Ladies’ Luncheon
Nothing says Ladies' Luncheon like finger sandwiches, ice tea and rich desserts. Last week, I signed up to make tuna salad sandwiches for my Community Bible Study class. I love a GOOD tuna salad sandwich. No other sandwich is more filling.
Now, a really good tuna salad sandwich must be made to be sweet and salty with crunch and chew. The bread needs to be firm or toasted, or both! Let's not leave out, a good kosher spear keeping it company on the side.
HERE'S WHAT I PUT TOGETHER
- 1 (12 ounce) can Solid White Albacore Tuna
- 1/4 cup chopped celery
- 1/4 cup chopped broccoli
- 1/4 cup golden raisins
- 1/2 cup chopped Gala apple
- 1 tablespoon fresh lemon juice
- 1/2 cup mayonnaise
- salt & pepper to taste
Drain tuna well. Mix all ingredients in a medium size bowl. Make it a day ahead or serve immediately as a sandwich or with your favorite leafy mixed greens.
Solid white tuna is my favorite diet food when I want to drop a few pounds. I will add 1 cup of tuna salad to a mound of leafy greens and I will be full until dinner. As long as I change up the fruit and veggies, I can eat it regularly without burning out.
