		<description>Once again, this recipe also passed the quality inspection team.  And once again qualified as a do-over recipe.  I added black olives, zuchinni, celery and oregano, and used mozzarella and cheddar cheese.  Yes, pretty much like a salad with cheese and chips.  Yummy!

Yummy!!! Sounds good-tonight I am making a veggie stir fry over brown rice-I bought a bag of cut veggies carrots broccoli and cauliflower and I need to start using it. I will add onions and celery to boost flavor and I am trying to find a sauce recipe to use with it. We eat a vegetable meal about once a week-it cuts down on the costs of meat and is still really filling and definately healthy!

I did a post a few weeks ago about this very same thing. I use nachos to help clean up leftover veggies and meat in the refrigerator! I would also eat them everyday, if I thought I could get away with it...

Dallas used to have a terrific restaurant in the old Lakewood area called the Dixie House. My Aunt Cindy &amp; I would go there for their Veggie Plates. I remember having such a hard time deciding what 3 vegetables I wanted on my plate. They had the BEST baked yellow squash, fried okra, and black eye peas. 
That place introduced me to Veggie plate dinners.  Before then, I thought everyone was suppose to eat a meat with two veggies. I was just around eleven years.

Veggie plate dinners are my favorite nights. I love that no matter what veggies I cook, they all go together.</description>
