4 Minute Vegetable Stew in the Instant Pot is delicious! Make up a pan of cornbread while you're in the kitchen. It goes perfectly with this stew.

What you need to make 4 Minute Vegetable Stew:

1 bell pepper, chopped
1 medium sweet onion, chopped
2 cups canned diced tomatoes, semi-drained
1 cup frozen corn
1 1/2 vegetable broth
1 tablespoon chili powder
1 1/2 teaspoon ground cumin
1 1/2 teaspoon green curry paste or 1 fresh jalapeno
4 cups cooked canary or pinto beans
1 cup fresh cilantro, chopped

Pressure cooking time 4 minutes with a 10 minute natural pressure release.
