Black-eyed Pea and Brown Rice Salad, Oil-Free

I hope you're not tired of hearing me go on and on about the Plantpure Nation cookbook or my own book, O M Gee Good! Instant Pot Meals, Plant-Based & Oil-Free. Both cookbooks are chock full of solid family pleasing meals and I want you to have all the help you need to have fun serving your family.

Here's the recipe from this video:
Italian Dressing
1 cup veggie broth
¼ cup red wine vinegar
1 tablespoon Dijon mustard
1 1 /2 teaspoon sugar
3 garlic cloves
2 teaspoon chia seeds
1 teaspoon Italian seasoning
¼ teaspoon each salt and pepper
? teaspoon paprika

Blend with immersion blender and set aside.

Black-eyed Pea and Brown Rice Salad

2 (15-oz.) cans black-eyed peas, rinsed & drained
2 cups yellow corn, fresh or frozen
2 medium tomatoes, chopped
1 green bell pepper, diced
1 roasted red bell pepper, diced
1 small yellow onion, diced
2 green onions, sliced
2 garlic cloves, minced
2 tablespoon dried cilantro
2 cups cooked brown rice
1 cup Italian dressing

Toss vegetables, herb and brown rice together in a large bowl. Pour Italian dressing over salad and toss together. Salad grows tastier with time.
