Bring Along Black Bean Hash from the Instant Pot

Here's ANOTHER family pleasing whole food plant based, oil-free recipe cooked in the INSTANT POT. I know! I'm totally obsessed with this appliance. If you have one already, you know how I feel.

HERE'S ALL YOU NEED
Feeds 4 easy

1 onion, chopped
3 garlic cloves, minced
1 large potato, cut into 1-inch chunks
1 small bell pepper, chopped
1 cup diced tomatoes
1 tablespoon chili powder
1/2 teaspoon cumin
1 (15-ounce) can black beans, rinsed
1 cup sweet corn, fresh or frozen
1/2 cup water

Place all the ingredients into the Instant Pot. Stir ingredients together.
Set cooking mode on “Manual” for high pressure. Adjust time down for 2 minutes.
When cooking is done, use either natural release or quick release method to release pressure from pot. Serve with your favorite tortillas.
