I can't wait for you to make this Instant Pot meal. It has all the robust flavors of a chili, yet it's light like a soup. My family enjoyed it straight up for lunch then again poured over baked potatoes for dinner. Then we ate again for lunch the next day. Three times in row is good. We had our fill by that point.

6 cloves garlic , finely chopped
1 medium yellow onion , chopped
1 (12-ounce) jar roasted red bell pepper, drained
1 tablespoon New Mexico chili powder
2 1/4 cups brown lentils, washed and drained
1 (26-ounce) can petite diced tomatoes
8 cups vegetable broth
1 1/2 teaspoons Liquid Smoke
2 tablespoons dried cilantro
