Everyday Breakfast Smoothies for My Plant-based Family

Many folks have asked me recently, "What do you feed your plant-based family for breakfast?" Well as for the teen, tween and I, we have oat, spinach and fruit smoothies every morning. Yes, every morning. We're hooked on them. Have been since we started eating plant-based. The day isn't the same without a HUGE smoothie kickoff.

Smoothies work like this:
3/4 cup rolled oats
2 cups or a big handful baby spinach
3 large ripe bananas, fresh or frozen
2 cups frozen fruit of choice (blueberry, strawberry, tropical mix)
3 tablespoons maple syrup
2 cups plain unsweetened soymilk or enough to cover half the contents of the pitcher.

Start blender on low speed and increase to med-high speed, blend for up to 10 seconds.

Makes enough for 2 HUGE servings plus 1 regular serving.
