HERE'S ALL YOU NEED
Makes about 5 cups
3 cups cooked chickpeas
1 1 /2 cups celery, diced
1/2 cup yellow onion, diced
1 tablespoon fresh parsley, chopped
3 tablespoons egg-free mayonnaise
2 tablespoons sweet relish
1 1/2 tablespoons Dijon Mustard
6 drops liquid smoke
whole grain bread of your choice
HERE'S ALL IT TAKES TO MAKE IT
In a medium-size bowl, coarsely mash chickpeas. Toss in the celery, onion, and parsley. Add the egg-free mayonnaise, relish, mustard and liquid smoke. Mix until all the chickpeas are well coated.
Toast up your whole grain bread and fill each sandwich to your heart's content.
Chickpea salad is also delicious over a bed of salad greens or used to fill cabbage leaves.
