Vegan Creamy Cheesy Broccoli Rice Casserole

You're in for a real crowd pleasin' dish. Vegan Creamy Cheesy Broccoli Rice Casserole - Eat it as a side or make it the whole meal.

  • 1 pound frozen broccoli, thawed
  • 3 cups cooked brown rice
  • 1/2 cup chopped red bell pepper
  • 3/4 teaspoon black pepper
  • 2 cups Vegan Cream of Chicken Soup
  • Daiya Cheddar shreds (optional)

Preheat oven to 400 degrees Fahrenheit.

Toss the broccoli, cooked rice, bell pepper and black pepper together in a large mixing bowl. Pour Vegan Cream of Chicken Soup over the mixture and toss again until all the ingredients are well coated. Transfer to a 9-inch by 13-inch casserole dish, no need to oil it. Lightly, lightly top with shredded Daiya cheddar.

Bake for 30 minutes.  Serves 6 to 10, depending on whether you're using it as the main course or a side.
