Even if your family doesn't like cauliflower, don't let that stop you from making my recipe. My family wouldn't touch cauliflower with a ten foot pole! However, they go after my Marvelous Macaroni and Cheeseless Macaroni dish like they're pack of puppies at feeding time.
Trust me and go for it.
HERE'S ALL IT TAKES
1 16-ounce bag of dried pasta cooked according to directions on bag. Drained. Set aside.
2-4 cups chopped fresh greens, like spinach, Swiss Chard or kale
1 16-ounce bag of frozen cauliflower
1/2 cup roasted cashews
1 cup water
1 teaspoon turmeric
1 teaspoon garlic granules
1/2 teaspoon sea salt
1/2 teaspoon Better Than Bouillon NO-chicken base
1/4 teaspoon white or black ground pepper
1/2 cup hot water (for thinning the sauce to your liking)
Cook your favorite pasta as directed on its package. Drain and set aside.
If you want to add some greens to this dish, like spinach, Swiss Chard or kale, add them to the pot cooking the pasta. For spinach, add to simmering pasta pot 5 minutes before the pasta is ready. For Swiss Chard or kale, add 10 minutes before the pasta is cooked. Drain pasta and greens together.
In a medium saucepan over medium high heat, add frozen cauliflower, cashews and 1 cup water. Cook 5-8 minutes until cauliflower is fork tender. Remove from heat. Carefully transfer to your best blender, liquid and all. Add spices. Blend until smooth and creamy. If it's really, really thick then add hot water to get it to the consistency you like.
Pour half of the creamy sauce in whatever large serving container you wish to use. Add all the pasta and greens. Pour the remaining cream sauce over the pasta. Gently fold all the ingredients until the pasta is well coated.
You're ready to serve it up or chow down.
