I belong to several closed groups on Facebook. Now I understand and respect the reasons why there are closed groups. However, every now and then, a great topic comes up that doesn't deserve to be hidden under a bush.  Someone asked their online peers what was their favorite way to prepare sweet potatoes. BOY oh BOY! The response was so awesome and mouthwatering, I had to do something to get their ideas across to you. For the sake of getting the ideas to you as soon as possible, I copied & pasted peoples responses as they wrote them. I corrected the spelling and made sure the oven temperature was written uniformly, that's it. You're smart. Your brain will make the corrections naturally.   1. Cut in half the lengthwise. Place cut side down on silicon baking mat. Roast in oven at 400ºF degrees.  They will be soft and taste like dessert this way.
  2. Sprinkle on cinnamon and a pinch of salt.
  3. Make a hot sweet potato sandwich with a little Mrs. Dash Garlic and Herb seasoning.
  4. They are awesome in chili or a Garam Marsala curry. Or serve them with rice and a spicy sauce. They make a nice pairing with cooked greens where they almost become the sauce. Bake them in oven or pressure cook in an Instant Pot.
  5. Baked at 450ºF degrees for 1 hour sprinkled with cinnamon.
  6. Love mine with applesauce, raisins and cinnamon! Very rarely, I'll put peanut butter on it! So good!
  7. We put salsa on ours, but then we put salsa on everything!

Squiggle a little vegan ranch style soy dressing on top and you have a great appetizer or snack or a great side for a Mexican dinner.
